🧀 Blueberry Avocado Salad with Cheese and Walnuts

Ingredients (for 2 servings):
1 ripe avocado
100 g (about 2/3 cup) fresh blueberries
100 g (about 4 cups) mixed greens (e.g. arugula, baby spinach, lamb’s lettuce)
50 g (about 1/2 cup) walnuts (lightly toasted)
80 g (about 1/2 cup) feta or goat cheese (or mozzarella chunks)
2 tbsp olive oil
1 tbsp balsamic vinegar or lemon juice
Salt and pepper to taste
Optional: a little honey for a sweeter dressing
🥄 Preparation:
Wash and dry the salad greens.
Cut the avocado in half, remove the pit, and slice it.
Dice or crumble the cheese.
Toast the walnuts in a dry pan until lightly golden.
Gently mix the salad greens, avocado, blueberries, cheese, and walnuts in a bowl.
In a small bowl, whisk together olive oil, balsamic vinegar or lemon juice, salt, pepper, and optional honey.
