🧀 Blueberry Avocado Salad with Cheese and Walnuts

Ingredients (for 2 servings):

  • 1 ripe avocado

  • 100 g (about 2/3 cup) fresh blueberries

  • 100 g (about 4 cups) mixed greens (e.g. arugula, baby spinach, lamb’s lettuce)

  • 50 g (about 1/2 cup) walnuts (lightly toasted)

  • 80 g (about 1/2 cup) feta or goat cheese (or mozzarella chunks)

  • 2 tbsp olive oil

  • 1 tbsp balsamic vinegar or lemon juice

  • Salt and pepper to taste

  • Optional: a little honey for a sweeter dressing

🥄 Preparation: 

  • Wash and dry the salad greens.

  • Cut the avocado in half, remove the pit, and slice it.

  • Dice or crumble the cheese.

  • Toast the walnuts in a dry pan until lightly golden.

  • Gently mix the salad greens, avocado, blueberries, cheese, and walnuts in a bowl.
