What I love about these Healthy Gingerbread Oat Cookies is how cozy and comforting they feel. They taste warm and spiced like classic gingerbread, but without being too sweet or heavy. The oats make them filling, the banana and honey give a gentle natural sweetness, and you don’t get that sugar crash afterward. They’re soft, slightly chewy, and perfect with a cup of tea — the kind of cookie you can truly enjoy without feeling guilty.

Why they’re great:
High in fiber, naturally sweetened, and very filling — perfect for cozy winter cravings.
1 cup rolled oats
½ cup oat flour (or blended oats)
1 ripe banana, mashed
2 tbsp honey or maple syrup
2 tbsp coconut oil, melted
1 tsp ground ginger
1 tsp cinnamon
½ tsp nutmeg
½ tsp baking powder
Pinch of salt
Instructions
Preheat oven to 180°C / 350°F.
Mix all ingredients in a bowl until combined.
Scoop small portions, shape into cookies, and place on baking paper.
Bake for 12–15 minutes until lightly golden.
Let cool — they firm up as they rest.

1 egg white
½ tsp vanilla extract
½ tsp cinnamon
Pinch of salt
Optional: a few dark chocolate chips (85%)
Instructions
Preheat oven to 175°C / 345°F.
Mix all ingredients into a smooth dough.
Form small cookies and flatten slightly.
Bake for 10–12 minutes.
Cool before eating for best texture.
